Baking… Experimental Chocolate Port Cookies

I love red wine. Add a little bit of chocolate and some cheese and my night is complete.

Here is my FIRST ATTEMPT at a Red Wine / Port cookie.

The Recipe

Port Glaze

  • 1/2 cup port

Heat port on med/low until reduced by half.

Lemon/Lime Glaze

  • 1/6 cup confectioners sugar
  • 1 tbsp lemon/lime extract
  • Drop of yellow/green food coloring

Mix ’til smooth.

Cookie

  • 1/3 cup Butter
  • 1/3 cup Cream Cheese
  • 2 cups Flour
  • 1/2 cup Superfine sugar
  • 1 tsp vanilla extract
  • 4 oz. chocolate chips

Preheat to 350 ° F

Combine flour and butter/cream cheese – crumbling between your fingers until like oatmeal.

Stir in sugar and vanilla. Kneed into a firm dough.

Roll out cookies 1″ thick and cut.

Bake 15-20 minutes ’til light golden.

Melt chocolate chips on double boiler or microwave (1 minute high, stir, 30 second intervals stirring in between to smooth.)

Coat bottom of cookies and let set.

Glaze cookies with your choice of flavor.  Allow to partially dry before sprinkling with superfine sugar.

Notes

A dense dry biscuit, good with tea. Need completely different cookie base. Maybe even a thin chocolate goat cheese wafer…

Only a hint of cream cheese. Next time use goat cheese.

Port wine  overpowered by the chocolate. Next time reduce by a quarter & thin chocolate.
