Baking… Lemon Strawberry Cupcakes

GASP! My husband requested cupcakes! He has an elusive sweet tooth, so there is no way I can deny him when he asks. The conversation was something like this:

Me: “What should I make for dessert at your mother’s?” (Note: This conversation happens every Saturday.)

Him: “You haven’t made cupcakes in a while.”

Me: Stunned silence.

Him: “Filled ones… yeah. Lemon meringue.” (It’s his favorite.)

Me: “Umm, but… ahh, it’s too humid for meringue.”

Him: “I knew you were going to say that as soon as it came out of my mouth. Humm… lemon… with jelly!”

Me: “Ok!” And smiles abounded.

My Recipe:

Cupcakes – Baking Illustrated Yellow Cupcake (Dang things are consistently too dry!)
Filling – Homemade Strawberry Jelly
Glaze – Baking Illustrated Chiffon Glaze
Frosting – Baking Illustrated Buttercream
