Baking… Chocolate Raspberry Cheesecake


I used a 4″ springform and a 8″ springform:

Yellow cake mix with butter for the crust from Pillsbury’s Almond Cheesecake recipe, (the recipe below is halved.)
• 1/2 box Pillsbury Yellow Cake mix (I used a cheaper brand in the past and it tasted funny.)
• 1/4 butter, softened

• Preheat oven to 350
• Spray pans and flour.
• Mix cake mix and butter til crumbly.
• Press into pans and up the sides.
• Bake 15 minutes until edges are golden brown.

Chocolate cheesecake with a touch of raspberry liquor, Kraft’s Chocolate Royale recipe, (the recipe below is halved.)
• 16 oz cream cheese, softened
• 1/2 cup sugar
• 1 Tbsp flour
• 4 oz semi-sweet chocolate (I used unsweetened)
• 1/2 tsp vanilla
• 2 eggs
• 1/8 cup raspberry liquor

• Turn down oven to 325
• Beat cream cheese, sugar, & flour til blended.
• Melt chocolate. 1 minute in the microwave & stir. Followed by 30 second intervals.
• Mix in liquor to chocolate.
• Add chocolate & vanilla to the cream cheese mixture and mix well.
• Add eggs, 1 at a time – mixing on low until just blended.
• Pour into crust and bake 55 minutes until center is almost set.
• Loosen around rim with a sharp knife.

And chocolate ganache with more liquor to fill in the top.• 8oz chocolate (I used 60%), chopped
• 3/4 cup heavy cream
• 1/8 cup butter
• 1/8 cup raspberry liquor

• Place chocolate in metal* bowl.
• Heat butter & cream just to a simmer on stove top OR in microwave (1-2 minutes)
• Pour over chocolate and let rest for 5 minutes
• Mix until smooth. (Will look curdled at first, keep mixing.)
• *If still lumpy once well mixed, carefully reheat over a pot of boiling water. Stir until smooth.
• Remove from heat and mix in liquor.
• Pour on cheesecake and clean out bowl with fresh croissant. (It will thicken as it cools.)

The strawberry is filling in the taste test I couldn’t resist the night before serving!
