Every birthday at work is an excuse to take an extended coffee break and chat over cake. Sometimes the cake is from the store BUT sometimes I get ambitious and make goodies from scratch.
This time our birthday lady is allergic to dairy (random parts of her face swell!) and so after a quick online search I had my menu.
Lemon-Almond Cake with Whipped Coconut Cream and Fresh Strawberries
It was moist and yummy with a bit of an eggy flavor. The birthday lady even used the leftover whipped coconut cream to flavor her coffee. They ate it all up before I thought to take a picture! But I did make cute little recipe cards for all the fans.
