Creating… Lentil Soup

Lately, I have been traveling to a local cafe (The CoffeeNook) at lunch exclusively for their soup. Tonight I attempt to make my own! The creativity stems from my major derivation from the original recipe (due to a sparse pantry) as you will see below.

 

Lentil Soup

 

3/4 cup dry lentils (originally 1 cup), rinsed and drained
omitted (1 cup chopped sweet pepper)
2 sliced carrots
2 onions (originally 1 onion)
1 cup turkey broth (originally 2 tsp bouillon)
omitted due to seasoned broth above (originally 2 tsp fresh sage & 1/8 tsp red pepper)
2 cloves minced garlic
6 oz cooked sausage

Cook til tender: onions, carrot, & garlic (this step not in original recipe but I hate boiled onions!)

Mix lentils with onions, carrots, garlic and add broth and 3 cups of water (original recipe calls for 5 cups water).

Bring to boil and reduce heat to simmer 25 minutes til vegetables are tender.

Stir in sausage and heat through before serving.

 

 

 

Thank God it still tastes good!
